Original Christmas Cookie Recipes
So here are two irresistible cookie recipes:
1. Rum truffles
For this recipe, you will need 200 grams of dark chocolate at 64%, 25 cl of liquid cream, 50 grams of light butter (still...), dark rum, baking paper bases, edible glitter and small golden balls for decoration.
First, place the chocolate in a bowl and chop it into pieces. In a small saucepan, heat the single cream without boiling, then pour it over the chocolate until the mixture becomes smooth and creamy. Add the butter and a drizzle of dark rum or vanilla extract. Transfer the mixture to a piping bag and place a small amount of the mixture into each baking paper mold. Refrigerate for about 30 minutes before decorating. Leave in the refrigerator for another hour or a little longer.
2. Lavender Flower Shortbread
At a herbalist's, get a handful of lavender flowers. For this recipe, you'll also need 120 grams of salted butter, 1 egg plus one yolk, 120 grams of sugar, 190 grams of flour, and two sachets of yeast.
Whisk together the egg, yolk, and sugar until frothy. Add the flour, baking powder, 1 teaspoon of lavender flowers, and then the softened butter. Knead by hand and form a ball. Refrigerate in a clean cloth until the next day. On the day, roll out the dough on your floured work surface (1 cm). Cut out spheres with a small glass, then transfer them to a baking sheet, on which you will place a sheet of parchment paper. Bake for 15 to 17 minutes at 180°C (gas mark 6) in a preheated oven. Let the cookies cool before storing them in the gift box.
Note: If you can't find a herbalist nearby, replace the lavender flowers with lemon zest.
