Which wine to serve with which dish at Christmas?
The entrances
What do you serve with a foie gras starter?Traditionally, we recommend a sweet Sauternes, a Monbazillac, or even a Jurançon. For a more full-bodied foie gras, opt for the spicy side of Gewurztraminer to accompany it.
What do you serve with a smoked salmon starter? Preferably, a white wine such as a good Crémant de Loire or a Sancerre.
What do you serve with a seafood starter?
To enhance the salty flavor of oysters, opt for a mineral white. For example, a Sauvignon or a Muscadet. Or even a Riesling, provided you like Alsatian wines. Chablis is a wonderful pairing with shrimp. Pouilly-Fussé is the best choice with lobster or crayfish.
Main dishes
What do you serve with turkey or capon?
Pinot Noir brings out the exquisite flavor of grilled poultry skin beautifully. For example, a Côteaux du Giennois or a Mercurey.
What do you serve with a leg of lamb?
Leg of lamb (beef, pork, lamb) pairs well with a wide range of wines. For guaranteed success, uncork a Bourgueil, a full-bodied Spanish wine, or even a Saumur Champigny.
What do you serve with game?
Pomerol and some Burgundy wines (e.g., Nuits Saint-Georges) are excellent with venison. With quail, a Saumur-Champigny will bring out the flavor.
Desserts
What do you serve with desserts?
If your budget allows, a Champagne, of course! Otherwise, a Clairette de Die or a good Crémant d'Alsace. With chocolate desserts, it's best to offer a sweet wine like Vintage Port or a Maury.
