Recipe: Serve a profiterole tree for Christmas
Un peu à la manière d’un Saint-Honoré, le sapin de Christmas en profiteroles constitue un centre de table-dessert qui épatera vos invités.
The ingredients:
For the profiterole dough, you will need 150 grams of white flour, 4 eggs, 125 grams of butter, 1 tablespoon of sugar, 1 pinch of salt, 250 ml of water.
For the garnish : homemade or store-bought whipping cream. If the dessert is served quickly, you can use vanilla ice cream to garnish the profiteroles.
For the caramel sauce, You will take 250 grams of caster sugar, 25 grams of salted butter, 25 cl of liquid cream. You can also use melted Toblerone chocolate.
Preparation steps:
Mash the butter with a fork and transfer it to a saucepan, add the salt, sugar, and water. Heat without boiling. Remove from the heat.
Gradually whisk in the flour. Return to the stovetop and cook again, stirring the dough with a wooden spoon until it comes away from the sides of the pan.
Remove from heat again and add the whole eggs one by one, then whisk with an electric mixer for about a minute.
Transfer the soft dough to a piping bag and form small balls onto a baking sheet lined with parchment paper. Leave space between them as they will expand.
Bake for about 30 minutes at 200°C or as soon as the balls are well risen and golden. Let cool before garnishing with whipped cream or vanilla ice cream.
For the caramel: Melt the sugar in a small saucepan until the mixture is a medium golden brown, then gradually add the butter and cream in a thin stream.
To create a Christmas tree with profiteroles, place enough filled balls on a large plate to form a round base that should not completely fill the supporting plate. Using a brush, stick the profiteroles together and let them set. Repeat this process for each subsequent row, always reducing the surface area covered to create a conical shape. Drizzle the caramel from the top to the bottom of the "tree" to decorate and stick the profiteroles together.
Note: If you don't have a piping bag, use a freezer bag with one corner cut off.
