Iced Christmas Petits Fours
These melt-in-your-mouth cupcakes will delight your guests and satisfy their sweet tooth. Easy to make, these iced cupcakes will add color to your dessert platter. Preparation only takes a few minutes. As for decorating, you'll need about an hour.
Ingredients :
Your white cake recipe or a purchased preparation
1 ml of regular gelatin
5 ml of cold water
50 grams of granulated sugar
15 ml corn syrup
65 ml of water
600 grams of icing sugar
1 large egg white
30 ml of fat
3 ml vanilla
Food coloring
Preparation :
Bake the cake mix, let it cool, then cut into equal squares.
Soften the gelatin in 5 ml of cold water.
In a double boiler, combine the granulated sugar, corn syrup and 65 ml of water, and heat for a few minutes.
Place directly on the heat and bring to a boil, stirring constantly to dissolve the sugar.
Remove from heat and stir in the softened gelatin. Let cool until the mixture is slightly warmer than lukewarm.
Gradually stir in the icing sugar. Add enough icing sugar to obtain an icing that is neither too thick nor too light. Add the egg white, fat, and vanilla and beat vigorously.
Pour the frosting into 4 different dishes, then add a little red, blue, green, and yellow food coloring to each.
Place the cake squares on a wire rack with a bowl underneath. Slowly pour the frosting over the cupcakes until they are well coated.
Collect the icing that has fallen into the bowl and repeat the operation.
Decorate with small sugar designs, maraschino cherries or rosettes made from buttercream icing.
