Learn how to make nougat for Christmas
Le nougat est une confiserie délicieuse dont la fabrication remonte aussi loin que l’Antiquité. En effet, on le confectionnait en Orient avec des amandes, du miel et des épices sélectionnées. Au cours des années, on lui a ajouté le blanc d’œuf. Le plus connu des nougats au monde est celui de Montélimar. Épatez vos proches et amis avec du nougat que vous aurez préparé vous-même!

As ingredients, you will need 300 grams of crushed or whole almonds, 4 egg whites, 1 good pinch of salt, 350 grams of honey, 120 grams of soft butter and 950 grams of sugar as well as two tablespoons of liquid vanilla and food coloring of the color of your choice (optional).
Preparation steps:
In a large, heat-resistant bowl, whisk the egg whites with the salt until stiff and add two tablespoons of sugar (taken from the 950g). Set aside. Pour the sugar and honey into a bain-marie and bring to a gentle boil (143°C). Be sure to clean the sides of the pan thoroughly during cooking.
Then gradually pour the sugar and honey mixture over the beaten egg whites and add the vanilla. Continue whisking for a minute (the mixture should begin to color).
Heat the container over very low heat to dry out the mixture. Stir constantly with a wooden spoon. Do not let it burn. The drying process can also be carried out in a bain-marie. Remove and set aside.
Mix everything with the butter and almonds and line a mold with parchment paper to place the nougat in, which you will gently press by hand.
Place a weight on the mass and let it cool.
When the nougat is no longer hot, cut it into strips or cubes. Wrap each piece in plastic wrap.
Note: The electric knife makes cutting the mass easier.
