Christmas mochas, those delicious little cakes that often appear on the Christmas Eve menu, always make people happy. Purchased at the grocery store, they have the unpleasant disadvantage of being very expensive. Otherwise, the recipes offered are sometimes complicated, very time-consuming, and do not always produce the desired results.
The one presented below is very easy to make and will delight your guests' taste buds. These little cakes are not only delicious, but they absolutely melt in your mouth.
To make this recipe, you will need the following ingredients:
Cake
110 grams of soft butter
225 grams of sugar
3 egg yolks
3 egg whites, beaten until stiff
230 grams of all-purpose flour
10 ml baking powder
1 pinch of salt
125 ml of milk
5 ml vanilla essence
Cake decoration
Toasted coconut
A few maraschino cherries
Icing
110 grams of butter
55 grams of vegetable shortening (fat)
1 beaten egg
15 ml corn syrup
570 grams of icing sugar
5 ml vanilla essence
45 ml of milk
3 ml of strong boiled coffee
Preparation of the cake:
Preheat the oven to 180°C (Gas Mark 6).
Beat the egg whites until stiff.
Cream the butter, then add the sugar and egg yolks.
Fold in the egg whites and set aside this first mixture.
In another bowl, mix the flour, baking powder and salt.
Add this mixture to the first, alternating with the milk and vanilla essence.
Pour into a greased and floured 33cm x 23cm mold.
Bake for 30 minutes. Let cool and cut into 15 squares.
Preparation of the icing:
Mix all ingredients together.
Frost the cupcakes on all four sides, then roll in the toasted coconut.
Add a layer of frosting on top, garnish with a maraschino cherry or to your liking.
