A “secret” recipe for Christmas cookies
Comme Christmas est une fête de générosité, nous avons décidé de transmettre aux internautes une recette de biscuits de Noël tout simplement extraordinaire, longtemps transmise de mère en fille sous le sceau du secret.
Ingredients
180 g sifted flour
1 medium egg
1 level teaspoon of baking powder
1 small pinch of salt
1 tablespoon of the mixture called “Four Spices”
3 small tablespoons of softened butter
85 g white or brown sugar
1 tablespoon of runny honey
Preparation
Mix the dry ingredients (flour, yeast, salt, sugar, and spices) in a bowl. Then beat the butter and egg in a separate bowl. Add the honey, then the dry ingredients, little by little, while mixing until you get a smooth dough. Wrap the resulting dough in plastic wrap and refrigerate for at least 2 hours. This dough can also be made the day before baking.
Lightly flour your work surface and roll out the dough with a rolling pin, neither too thinly (to preserve the tender texture of the biscuits) nor too thickly (because the dough will rise with the yeast). The right thickness is about 5 mm. Place the biscuits as you go on a baking sheet lined with parchment.
Cooking
Preheat the oven to 180°C (350°F). Bake for 8 to 10 minutes (depending on the oven). The cookies should not be too brown. Let them cool on a wire rack. They will become crispy as they cool.
The cookies can be decorated with sugar and egg white icing.
This recipe makes about 30 cookies. Enjoy!
