American Christmas Pudding Recipe
Aux États-Unis, on ne songerait jamais à terminer le Réveillon de Christmas sans apporter sur la table le Christmas-Pudding, dessert froid (sans cuisson) inspiré du fameux Plum-Pudding anglais.
According to historians, this traditional dessert dates back to the Middle Ages, but it is unknown in which part of the United Kingdom it was created. It is known that plum pudding was baked and prepared four weeks before Christmas, then hung on a hook in a large piece of cloth to dry. Over time, it was adopted by Americans and English Canadians.
So here is the recipe for this traditional dessert (in American measurements):
For ingredients, you will need half an ounce of gelatin, 3/4 cup of cold water, one pint of whole milk, one cup of sugar, 1/4 tsp of salt, 1/2 tsp of vanilla, 1/2 cup of finely chopped dates, 1 cup of currants, 1/4 cup of a mixture of preserved lemon, sliced candied cherries and walnuts.
First, soak the gelatin in cold water for 5 minutes. In a double boiler, melt the sugar, salt, and diluted gelatin. Remove from the heat when the mixture thickens slightly, then add the vanilla, candied fruit, and nuts.
Pour everything into a mold submerged in cold water. Let it set completely before removing from the mold onto a serving dish. Garnish with mistletoe sprigs and serve with a lightly sweetened, vanilla-flavored whipped cream.
