Quebec recipe for brie with cranberries
To keep your guests waiting a little longer, surprise them with this elegant and delicious Quebec starter.
Ingredients :
75 ml dried cranberries
60 ml chopped black olives
1 red onion, diced
60 ml of toasted pine nuts
15 ml chopped parsley
30 ml butter
1 cheese such as Brie or Camembert
75 ml of Port
Preparation :
First, preheat the oven to 180°C and place the rack in the center. Prepare a basket of toast and sliced baguettes.
In a salad bowl, pour the Port over the cranberries and let the fruit soak for about 20 minutes.
Then brown the onion in butter (10 minutes) and deglaze with the port-cranberry mixture. Now add the olives and pine nuts.
Place the cheese on a 30cm square of aluminum foil. Remember to fold the foil around the cheese to help it retain its shape during baking. Spread the filling over the cheese and place it on a baking sheet.
Cook for no more than ten minutes. Very decorative, you will be proud to place it in its entirety in the center of the table.
